INGREDIENTS:
For the chicken
- 2 tablespoons seed oil
- 1 kg chicken breast fillet
- ½ medium-sized onion, cut in thin wedges
- ½ cup beer
- 1 tablespoon honey
- 1 tablespoon mustard
- 2 tablespoons soy sauce
- 2 tablespoons parsley leaves, finely chopped
- salt & pepper
For the asparagi:
- 1 kg asparagi (trimmed)
- 1 teaspoon salt
- 1 teaspoon paprika
Method:
Season the chicken breast fillets with salt and pepper and sauté over medium to fairly high heat for approximately five minutes on both sides until they become golden brown. Add the onions in the saucepan for approximately five more minutes.
In a bowl, mix the beer, soy sauce, honey and mustard. Add this mixture in the pan and leave until it reaches a boiling point. Remove from heat and serve with the asparagi and the onion sauce. For the asparagi: melt the butter in a saucepan and add the trimmed asparagi. Leave until they become soft. While sautéing, season with salt and paprika.
