INGREDIENTS:
- 750g chicken breast
- 1 green pepper
- 1 red pepper
- 1 yellow pepper
- 1 onion
- 1 stalk celery
- 1 tinned pineapple [in natural juice]
- 1 cup honey
- 2 eggs
- 1 cup wine vinegar
- 1 teaspoon ketchup
- some flour
- some oil for frying
Method:
Cut the chicken in slices. Run the slices through the egg to coat it lightly and then lay the chicken in the flour. As soon as the oil starts shimmering, fry the floured chicken slices. When golden brown, remove from oil and replace the chicken with the vegetables cut in cubes. Then, add the pineapple cut in cubes. When the vegetables are half cooked, add the honey - previously dissolved in vinegar and pineapple juice. Let it simmer until the sauce becomes thick and rich. Finally, add the chicken.
